Ingredients

1/2 cup reduced fat cheddar cheese
3T light cream cheese
1T low fat mayonnaise
8 jalapeno peppers
1/4 cup liquid egg substitue
7 T crushed Melba toast
cooking spray
Tips
Directions
1. Preheat oven to 350
2. combine cheese, cream cheese and mayo mix well and set aside
3. Halve peppers lemgthwise and remove seeds fil peppers with cheese mixture
4.dip stuffed peppers into egg subs. roll in crushed melba toast
5.transfer to large baking sheet prepared with 6.cooking spray and coat top of peppers with it
7. bake until fillling is bubbly and outside begins to brown about 30 minutes
