In summer, swap corn for the peppers. Meatless Meal: Use 1/2 cup drained and rinsed pinto or black beans in place of the chicken.
Pierce the sweet potato several times with a fork or knife. Microwave until tender. Meanwhile, place a small skillet over medium heat and coat with cooking spray. Add the onions and cook for about three minutes, until they start to brown, then add the peppers and chicken. Cook another two minutes, then stir in the barbecue sauce and one tablespoon water. Turn off the heat. Place the sweet potato on a cutting board and use a knife to cut open the top. Scoop out most of the flesh and add to the pan with the chicken and veggies. Place the sweet potato in a bowl, then gently scoop the chicken and veggies into and on top of it. Top with the Cheddar, yogurt and cilantro, and serve immediately.
A lot more delicious than I expected! The only thing I did differently was substitute fat free sour cream for the Greek yogurt (not a yogurt fan). Otherwise, everything was the same. I will definitely be making this again!
This was the first time I've ever made anything like this with a sweet potato, I didn't think the cheddar would be a good taste combination. I was surprised how good it tasted, but since I am not a cilantro fan, I left that part out!
So yummy! Not a fan of cilantro so I skipped that but this was really good. I made the recipe for four servings and eyeballed the BBQ sauce but I'll be sure to measure next time to track nutrition properly. We will be making this again! Husband LOVED it!
This recipe was fun and easy to make, and turned out to be a very filling and delicious meal. The potatoes I used were too big, so the potato ended up overpowering the other ingredients. But with smaller potatoes, I'm sure there would be a better balance. Will definitely be making this again!
I like to add a little brown sugar to a baked sweet potato with bacon. I bet it would go great on this. People have thought I was making a mistake when I went to add bacon and cheese to my sweet potato. I am glad I'm not the only one who knows they are not JUST for dessert!
My family enjoyed this recipe very much. I'm so thankful that I've exposed my kids to so many different foods that they can appreciate all the different flavors. Because of recipes like this they have started to experiment on their own.
added water to cook the onions after started to burn then added the peppers and chicken i added cumin and garlic then put altogether instead of putting in potato shell very filling I would make again
