Beef Stroganoff

Number of Servings: 8

Ingredients

    16 oz whole wheat pasta, dry (makes 8 cups cooked)
    1.25 lb lean beef (I use tip steak) sliced into thin strips
    1 med onion, sliced into thin strips
    1 lb. fresh mushrooms, cleaned and sliced
    4 cloves fresh garlic, pressed
    2 tsp olive oil
    1 tsp salt
    1/4 tsp pepper
    3/4 cup light sour cream
    2 oz chardonnay white wine
    1 can 98% fat free cream of mushroom soup


Directions

Cook pasta to desired tenderness, thn drain. While pasta is cooking, sautee beef with onions and garlic in olive oil. Season with salt and pepper. Add a little water if pan gets dry while cooking to keep the meet moist. Add mushrooms and cook until tender. When meat and mushrooms are thoroughly cooked, add white wine to deglaze the pan, followed by sour cream and cream of mushroom soup. Serve over pasta.
