Introduction

Number of Servings: 9

Ingredients

    1 medium onion finely chopped
    1/2 can whole olives finely chopped
    1 can green chilies (7oz)
    2 cups Colby jack cheese
    1 3lbs bag of frozen skinless chicken breast
    1 28oz can of green chilli sauce

Tips

I add green chiles but if you want you could add jalapenos for a bang!!!!!


Directions

while boiling the chicken finely chop onion and olives and
put in large mixing bowl also put in green chillies buy this time the chicken is usually done so strain it put on plate and let cool for about 15 min then shred with two forks add to other ingredients grate 2 cups of cheese and add to the large bowl as well. then put the green chilli sauce in a pan and heat up in another pan add olive oil and heat up then with a pair of tongs put the tortillas in the oil flip and take out put in green sauce and then into pan and fill with other ingredients roll and repeat once full pour sauce over top then sprinkle with the rest of the cheese and bake for 20-30 min

Serving Size: makes 18 enchiladas in two 9x13 pans
