Walnut Chicken

Ingredients

    boneless, skinless chicken breast, 1 lb. cut into 1 inch pieces
    Soy sauce, low sodium, 4 tbsp
    Lemon juice, 1 tbsp
    Ginger, ground, 1/2 tsp
    Vegetable Oil, 3 tbsp
    Garlic, 1 clove, pressed
    Walnuts, 1 cup, chopped

Directions

Combine 3 tablespoons of the soy sauce, lemon juice, and ginger in a medium rice bowl; add chicken pieces; let stand 15 minutes.

Meanwhile, heat WOK or large skillet; add 2 tablespoons of the oil; heat until almost smoking; add green onions, garlic and walnuts. Cook 3 minutes tossing mixture with slotted spoon; remove mixture to a small bowl.

Add remaining tablespoons oil to WOK, heat, add chicken pieces and soy mixture; stir-fry until chicken is done and soy mixture begins to coat chicken, about 5 minutes. Add walnuts mixture; toss and serve when heated.

Serve over a bed of rice.
