raw kale salad w aged balsamic vinaigrette

Ingredients

    1 bunch kale, washed and chopped
    kosher salt and fresh pepper
    1 tsp dijon
    1T aged balsamic vinegar
    2T evoo
    1/2T lemon juice
    1/4C walnuts, toasted
    1/4C craisins

Directions

place kale in a bowl, sprinkle w salt. massage kale until it begins to soften. whisk together mustard and vinegar, grind in some pepper and whisk in the oil. taste for balance and add lemon juice, salt and pepper as needed. when ready to serve massage the dressing into the kale, top with nuts and berries. (salad can be dressed in advance and left to soften at room temperature until ready to serve)
