Ingredients

    1 1/4 lb extra lean Hamburger
    1 Cup Chopped Onion
    1 1/2 Cup Chopped Celery
    1 1/2 Cup Chopped Carrot
    1 Cup Chopped Red Bell Pepper
    1 1/2 Cup Chopped Cauliflower
    1 Cup Roasted Corn
    3 Cloves Minced Garlic
    1 Can Diced Tomatoes
    1 Can Black Beans
    2 Cups Water
    2 Cups Chicken Broth, 99% fat free
    3 tsp Ground Cumin
    3 tsp Ground Coriander
    1 tsp Salt
    1 tsp Pepper
    1 TBS Paprika

Directions

Brown hamburger with onions and garlic. Drain any fat. Add other ingredients, bring to a boil and simmer for 20-30 minutes.

Makes 6, 2-cup servings.

**can use a low sodium meatloaf or taco seasoning packet to change up the flavor.

***serve over brown rice for a heartier meal

****add a tablespoon of ff sour cream to each serving for added flavor.
