Garden Vegetable Barley soup

Garden Vegetable Barley soup

Number of Servings: 10

Ingredients

    1 1/2 c. chopped fresh cauliflower
    1 1/2 c. diced zucchini squash - abt. 1 medium
    1 1/2 c. diced summer squash - abt. 1 medium
    1 c. carrots peeled and chopped or baby carrots
    1/2 medium green bell pepper diced
    1/2 medium red bell pepper diced
    1 can petite diced tomatoes
    1 can vegetable broth
    2 1/2 cups water
    1 1/2 tbs. kosher salt
    1 clove fresh garlic minced
    1 cup quick cooking barley


Directions

Put all ingredients except barley in a crock pot. Let cook about 3 hours on high or 4 hours on low. Stir occasionally.
Add Barley the last 1/2 hour of cooking.

Serving Size: Makes 10, 1-cup servings
