Number of Servings: 3

Ingredients

Carrots, raw, 3 large (7-1/4" to 8-1/2" long)
    Onions, raw, .25 cup, chopped
    Garlic, 1 cloves
    Olive Oil, 1 tbsp
Baker's Angel Flake Coconut Sweetened, 4 tbsp
    Wild Rice, .5 cup
Brown Rice, long grain, .5 cup
    Better Than Bouillon, 3 tsp
Water, tap, 4 cup (8 fl oz)

Tips

It helps if your water/chicken stock is heated.

I pair this with a sweet Salmon dish (I made a tropical Salmon recipe).

Directions

Heat oil in large skillet, heat carrots, onion, garlic in oil til onions just translucent. Stir in both rice's and coat slick and slightly brown. Stir in coconut to heated. Pour in 2 cups of Bouillon infused water. Boil and occasionally stir until water mostly absorbed. Add one more cup of water and simmer until absorbed. Test for tenderness adding more water if needed. At desired tenderness let rest before serving.

Serving Size: Makes 4 servings.
