Chipotle Turkey Burritos

Introduction

Guaranteed winner! It's a little indulgent, but oh so yummy! It goes great with a light cucumber based salad. Guaranteed winner! It's a little indulgent, but oh so yummy! It goes great with a light cucumber based salad.
Number of Servings: 6

Ingredients

    1/2 pound ground turkey
    1 can black beans
    1/2 sweet red pepper
    1/2 onion
    1tsp cumin
    Salt/pepper to taste
    2-3 chipotle peppers in adobe sauce (feel free to use more based on your love of spice)
    6 Whole wheat tortillas
    1 cup old cheddar (or favourite) cheese
    (this recipe uses regular cheese, not low fat - feel free to use low fat as a substitute)
    3/4 cup low fat sour cream

Directions

Saute onion and pepper with cumin and 1 chipotle chopped up. Add turkey and cook thoroughly.
In separate bowl, mash half the beans by hand or with blender. Add sour cream and the other cut up chipotle.
Mix cooked ingredients with cold.
Scoop 6 even portions into tortillas, burrito style.
Lay burritos side by side in a shallow baking dish. Pour salsa on top down the middle, and top with cheese.
* add frozen corn to cooked mixture for an alternate or addition to pepper or onion.
*Use low fat cheese to lower fat content.
