Ingredients

    3 Cups of "cubed" fresh or canned pineapple

    1 1/2 cups of cubed red bell pepper

    1 red onion sliced into thin wedges

    1 Table spoon Sesame oil

    1 Table spoon Olive oil

    1 Table spoon Brown Sugar

    1 Table spoon Sweet Coconut Flakes ( I used 1/4 cup)

    1 Table spoon Lime Juice

    Approx. 2 cups of Cooked Rice.


Directions

pre-heat oven 400.

arrange Pineapple , peppers, onion, on a un-greased baking sheet that a slip lip on the sides.

Drizzle sesame oil and olive oil over veggies....Sprinkle Brown Sugar over all......Roast in oven for 30 min. or until lightly browned.

Remove from oven and Sprinkle coconut over Veggies.....followed by drizzling Lime juice over all..........pour into serving bowl ......Serve each 1 cup serving over 1/2 cup plain rice.

Serving Size: 4 Full Cups
