Spinach Quiche Cups

Ingredients

    1 medium onion, finely chopped
    1/4 chopped mushrooms
    1/4 cup shredded carrots
    6 slices thinly sliced ham
    1/2 cup shredded cheddar cheese
    3/4 frozen spinach. thawed and drained
    1/2 cup flour
    1 tsp baking powder
    6 egg whites
    1 cup skim milk
    1/2 tsp ground nutmeg

Tips

Play around with veggie, cheese and meat combinations. So many possibilities!


Directions

Cook onion, carrots and mushrooms over medium heat in a pan lightly sprayed with cooking spray until onions begin to turn translucent. Place in a bowl with spinach, ham. cheese, flour and baking powder. Toss to coat. Add egg whites, milk and nutmeg, stirring thoroughly.

Lightly spray a 12 cup muffin tin with cooking spray. Fill cups with mixture (each will fill to the top) and bake at 350 degrees for 15-20 minutes, or until a knife inserted in the center comes out clean.

Serving Size: makes 6 servings (2 quiche cups per serving)
