Banana-Oatmeal Bread with Organic Buckwheat Flour

Introduction

New twist on one of my favorite recipes using organic buckwheat flour instead of all purpose flour. New twist on one of my favorite recipes using organic buckwheat flour instead of all purpose flour.
Number of Servings: 10

Ingredients

    Dry:
    1 Cup Old Fashioned Oatmeal
    1 Cup Buckwheat Flour
    1 tbsp cinnamon
    1 tbsp Baking Powder
    1tsp Baking Soda

    Wet:
    1 tsp vanilla
    1 Large Egg
    3 Large Bananas- Ripe








Tips

Sprinkle a handful of oats on top for decoration.

I may try adding various berries or nuts to try something new.


Directions

Pre-Heat oven to 375 degrees.
1. Grind Oatmeal in food processor until it is a flour like consistency.
2. Mix all DRY ingredients
3. Whisk egg, add banana and vanilla and mash until smooth.
4. Add Wet to dry.
5. Place mixture in a loaf pan with non fat cooking spray.
6. Bake at 375 deg for 40 minutes


Serving Size: Makes 1 Loaf: 10-12 servings
