World Famous Chili

Introduction

So named by my then four year old after it unanimously won a chili cook-off, this chili has an interesting mix of spicy, sour and sweet, each hitting your taste buds at a different time. It's also full of veggies. I prep it the night before, place it in the fridge overnight, then just transfer to the crock pot in the morning and let it cook all day. Ingredients

    1 lb 90% lean ground beef
    3 cloves garlic, pressed
    4 tbsp chili powder
    2 tbsp cumin
    2 tbsp coriander
    1 tbsp oregano
    1 large onion, chopped
    1 green pepper, chopped
    2 carrots, peeled and chopped
    1 can dark red kidney beans, rinsed and drained
    1 can light red kidney beans, rinsed and drained
    2 cans fire roasted tomatoes
    2 tbsp tomato paste
    1/4 cup brown sugar
    1/2 cup orange juice
    salt, to taste

Directions

Brown ground beef in non stick pan. Drain fat (I also rinse) and add garlic. Cook 2-3 minutes. Remove from heat. Add chili powder, cumin, coriander and oregano, stirring to coat meat.

Meanwhile, combine onion, green pepper, carrots and beans. Add meat and stir. Add tomatoes, tomato paste, brown sugar and juice and stir well to mix.

Cook in crock pot on low for 8 hours. (Adjust to your crock pot's settings)
