Clean eating bread

Introduction

great w/ cinnamon & raisins added great w/ cinnamon & raisins added
Number of Servings: 12

Ingredients

    1 cup white bread flour
    2 cups white whole wheat flour
    1.75 tsp kosher salt
    .5 tsp active yeast
    1 Tbs vital wheat gluten
    1.5 cups water

Directions

stir all ingredients other than the water together. Add water and stir until stick shaggy dough forms. (may need to add up to another .25 cups water to get this). Cover bowl w. plastic wrap and set on table 12-24 hrs. Heavily flour board and hands and shape dough into ball. Let rest 30 minutes. Heat cast iron dutch oven & cover in oven at 450 for 30 minutes while bread rests. put dough in hot pan and recover, bake 30 minutes. Remove lid bak an additional 10 minutes.
