Cabbage Beef Soup

Introduction

A remake of a great soup from Shoney's. Very yummy and full of flavor and veggies. A remake of a great soup from Shoney's. Very yummy and full of flavor and veggies.

Ingredients

    Head of cabbage shredded
    1 large onion sliced thin
    1 can diced tomatoes
    1 pound lean ground beef or turkey browned
    4 cups chicken broth
    1 can kidney beans
    1/2 cup sliced bell pepper
    3 tsp chopped garlic
    1 cup tomato sauce
    3-4 cups water

Directions

I do this in a crock pot. Chop cabbage as if for coleslaw (thin strips). Slice onion and bell pepper into thin slices.
Brown off meat and layer all into crock pot pour over all liquids, add salt and pepper and then water to cover all. Cook on low for 8 hours. Can also do a quick version in a pot. Saute cabbage and other veggies then brown off meat and add all back to a large pot. Pour in liquids and simmer til cabbage is tender. CAN LEAVE OUT MEAT IF WANT TOTAL Vegetarian
