Mashed Cauliflower

Introduction

A great substitute for mashed potatoes. A great substitute for mashed potatoes.
Number of Servings: 6

Ingredients

    1 large head cauliflower (6-7 in)
    1/4 c heavy cream
    2 tbsp butter
    salt and pepper

Directions

Trim the cauliflower, break into large florets, and boil or steam till very tender. Mash with food processor or mixer. Add butter, cream and salt and pepper to taste.

Serving Size: Makes six 3/4-cup servings.
