Firecracker Chicken

Ingredients

    1 lb. boneless skinless chicken breast, cut into 1/2 inch cubes
    1 Tbsp. canola oil
    1 C mushrooms, sliced
    1 C onions, sliced
    1 C asparagus, cut into 1 inch pieces
    1/2 C shredded carrot
    2 tsp. sesame oil
    1 Tbsp. rice vinegar
    1/4 C ketchup
    1/2 C fat free low sodium chicken broth
    2 Tbsp. splenda
    1/2 C sweet chili sauce
    6 garlic cloves, minced (or grated)
    4 tsp. ginger paste
    1 Tbsp. cornstarch





Tips

Serve over brown rice or quinoa.


Directions

1. Heat 1/2 of the canola oil over medium high heat. Brown chicken. Remove from the skillet, add the rest of the canola oil, and saute the vegetables.
2. While the chicken is cooking, combine the sesame oil, rice vinegar, ketchup, chicken broth, splenda, sweet chili sauce, garlic, ginger, and cornstarch.
3. Once the vegetables are crisp tender, add the chicken back to the skillet. Whisk the sauce again to make sure the cornstarch is incorporated, and pour into the skillet. Simmer until the sauce thickens.
