Introduction

Number of Servings: 1

Ingredients

    Cauliflower - chopped and ground in food processor or blender until consistency of couscous
    Cucumber - peeled, seeded, and chopped
    Celery - chopped
    1/2 onion - chopped - red onion is best
    Grape tomatoes - halved
    Kalamata olives - pitted and halved
    Red and Yellow peppers - seeded and chopped
    Handful of fresh basil - chopped or sliced
    1/2 cup crumbled feta cheese
    1/3 cup Olive Oil
    3 TBLSP Apple Cider Vinegar

    salt, pepper and oregano to taste

Tips

By grinding the cauliflower in the blender/food processor - it makes like a grainy consistency. For those looking for a gluten free alternative to grains - this is great!


Directions

Chop all vegetables as noted.
Combine in bowl with olive oil and vinegar and spices
Mix well
Enjoy!
