Chicken and Asparagus

Introduction

EXTREMELY low carb flavorful meal. EXTREMELY low carb flavorful meal.
Number of Servings: 6

Ingredients

    1/2 c. orange juice concentrate
    1/4 c. lemon juice
    2 T. minced garlic
    1 t. dried oregano
    1 t. ground ginger
    1 t. salt
    1 t. pepper
    6 T. oil
    6 chicken breasts
    1 bunch asparagus, ends snapped off
    6 c. salad greens

Directions

Whisk orange juice, lemon juice, garlic, oregano, ginger, salt, pepper, and 2 T. oil.

Pour all but 4 T. of mixture on chicken and let marinate in refrigerator for at least 30 minutes. Whisk 2 T. oil with remaining mixture (this will be used for dressing). Sprinkle asparagus with oil, salt, and pepper.

Cook chicken in skillet for 10 minutes or in 350 degree oven for 30 minutes. Cook asparagus with the chicken.

Let chicken and asparagus cool for at least 5 minutes. After cooling, slice chicken. Toss greens with dressing.

Put salad in bowls. Top with asparagus and then dressing.
