Introduction
We grew up so poor, yet feeling so good after a warm bowl of my Mother's potato soup. It's cheap and cheerful and us kids loved it. Our worries went out the window and as long as we had our Mom's dinners. With her cooking, we knew everything was going to be okay. She served this with hot dogs and buns. Ingredients

1/2 c. celery
1/2 a medium onion
4 medium potatoes, peeled
water to cover (about 3 cups)
1 tsp. salt
1/4 tsp. ground black pepper
2 c. milk
2 tbsp. butter
additional salt and pepper to taste

Directions
Slice celery into spoon-size slices. Peel an onion. Cut the top and bottom off. Cut in half lengthwise. Cut half the onion into thin strips lengthwise, and reserve the other half for another dish (or just slice a small onion.) Cut potato into quarters lengthwise, then into 1/2" slices. Add all the vegetables to a medium/large pot. Sprinkle with salt and pepper and cover with water just up to the top of the vegetables. Bring to a boil. Reduce heat to medium and cook until potatoes are fork tender about twenty minutes. Add the; milk, butter, salt and pepper to taste and bring up to almost boiling. Remove from heat and serve.
