Chicken fried rice

Number of Servings: 2

Ingredients

    200g chicken breast cut in bite size pieces
    1tsp olive oil
    2tbs soy sauce lite
    2 cups prepared veg eg mushrooms/carrot/broccoli/peas/courgette/green beans/red pepper
    2 siboes chopped
    2 eggs whisked
    1tsp garlic powder[or more to taste]
    14 almonds chopped
    1 cup brown rice

Directions

Prepare rice and set aside.
Scramble 2 eggs and set aside.
Cook chicken in oil until cooked and set aside.
Stir fry for veg for 4 mins.
Add soy sauce to rice and mix well.
Add rice, chicken & garlic to veg and cook for a few mins.
Sprinkle with almons & serve.
