Vegetable Saute w/ noodles

Ingredients

    whole wheat noodles
    1 tablespoon olive oil
    1/2 onions, chopped
    1 cup mushrooms, quartered
    1/2 cup green bell pepper, stripped
    1 1/2 medium tomatoes, coarsely chopped


Directions

Preheat a pan over medium low heat then add 1 tablespoon olive oil.

Add the onions and green pepper and brown slowly until tender, about 10 minutes.

add mushrooms. Do not raise heat. Cook an additional 10 minutes.

Add tomatoes and continue to cook until soft, 10-15 minutes.

Season with salt and pepper and serve over spaghetti
