Pecan Chicken with Garlic Sauteed Broccoli

Ingredients

    Pam spray or water/oil mixtures
    4 boneless skinless chicken breast halves (approx. 14 oz)
    1/4 cup honey
    1/4 cup Dijon Mustard
    1/3 cup pecans, finely chopped
    1 tsp olive oil
    1 clove garlic, pressed
    1/2 head broccoli florets, roughly chopped

Directions

Preheat oven to 350 degrees. Lightly spray a baking dish with Pam. Place chicken in baking dish. In a small mixing bowl, combine honey, mustard and pecans; spread mixture on top of chicken. Bake 20 to 25 minutes, or until chicken is cooked through. Meanwhile, in a skillet over medium-high heat, saute the garlic in the olive oil. Add broccoli and stir-fry until broccoli is bright green and tender-crisp. Arrange broccoli and chicken on dinner plates and serve. (I like to add baked sweet potatoes on the side)

Makes four 3.5-oz servings.
