potato soup

Number of Servings: 3

Ingredients

    1% milk, 2cups
    potato 2.25 cups diced
    light butter 2tbls
    1 can swanson chicken broth
    1tsp chicken bouillon granules
    1/2 tsp pepper

Tips

Serve with a tbls of real bacon bits and 2 tbls of low fat cheddar cheese if you like. Cheese and bacon not added in the nutritional info.


Directions

in a sauce pan, saute chopped onions in butter until translucent. Then add diced potatoes, bouillon granules and pepper, and cover with swanson chicken broth. Boil at medium high heat, covered, until potatoes are tender. Then add milk, reduced heat to medium and continue to simmer until the soup thickens up. I take my slotted spoon and mash the potato chunks because I just like it that way :)

Serving Size: cooks down to about 3 cups
