World's Easiest Chicken Taco Soup

Introduction

This reminds me of McCallister's chicken tortilla soup and is something I threw together out of things I had in my pantry one day when I was low on groceries. It's high on sodium, you can substitute fresh ingredients to improve the sodium content, this is just what I had on hand. It was really cheap to make, even garnished with sour cream and corn chips, it cost less than ten dollars to make! Number of Servings: 16

Ingredients

    4 oz. velveeta sharp cheddar (regular works- I like the tang of the sharp)
    1 12.5 oz can white meat chicken breast chunks
    about 1 can of yellow corn
    about 1 can of black beans
    1 can of rotel (I used mild with green chilis)
    4 cups 99% fat free chicken broth
    1 package chicken taco seasoning mix
    add water to dilute if desired (aprox. 1 cup)

Tips

Use fresh ingredients to decrease sodium content.


Directions

Combine taco seasoning, chicken and broth and bring to a boil, reduce heat and add canned ingredients and cheese. Stir and Let simmer about 45 min. - 1hour, stirring occasionally for best taste! I garnished with corn chips, cheese and sour cream. Yum!! :)
