Crustless Spinach Quiche

    1 Tbs Olive oil
    6-8 chopped scallions
    1 (10z) package of frozen chopped spinach
    6 beaten eggs
    2 1/2 cups shredded cheese, Muenster suggested but your choice
    salt and pepper to taste


Preheat oven to 350. Lightly grease 9 inch pie pan. Heat oil in large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. stir in spinach and continue cooking until excess moisture has evaporated. In a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan. bake in preheated oven until eggs have set, about 30-35 min. Edge should start to brown and the center will stop bubbling. Let cool about 10 min before serving.
