Classic Molasses Cookies

3/4 C Vegetable Shortening
1 C firmly packed dark brown sugar
1 large egg
1/4 C dark molasses
2-1/2 C all purpose flour
2 tsp baking soda
1 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp ground cloves
1/4 tsp salt
1/4 C granulated sugar
For chewier cookies cut back on a little flour, and bake only about 10-12 minutes, until top of cookies lose their shine and become set. Mix in a little cinnamon or other spice to the granulated sugar before you roll the dough in it.
Preheat oven to 350 degrees Fahrenheit.
Combine shortening and brown sugar in large bowl. Beat with electric mixer on medium speed until well blended. Add egg and molasses; beat until light and fluffy.
In another bowl, combine dry ingredients, except 1/4 C granulated sugar.
Beat dry ingredients into the shortening mixture until well blended.
Chill 3 hours, or overnight.
Shape dough into 1-inch balls; roll in granulated sugar and place about 1 dozen on a baking sheet, evenly spaced.
Bake about 10-15 minutes, or until top is set and edges are just beginning to brown.
Cool a few minutes before removing from baking sheet.
