Ingredients
-
2 packages of Athens mini fillo shells
=1 to 1-1/4 cups steamed butternut squash (roasted or mashed can also be used.)
whites of 2 large egg, beaten
2 tsp splenda
1/4 tsp ground tumeric
1/4 tsp ground allspice
1/4 tsp ground nutmeg
1/4 c. 2% milk
2-1/2 ounces Publix Gorgonzola reduced fat crumbled cheese
Tips
The sweetness does not overwhelm and can be adjusted to suit taste. Ovens vary and the time given is an approximate as I used a toaster/convection oven
Directions
preheat oven 350F. Place fillo shells on a baking sheet pan. Using an electric chopper or food processor combine squash, egg, splenda, tumeric, allspice, nutmeg and milk. With a teaspoon fill each shell as full as you can without running over the top of the shell. Sprinkle small pieces of Gorgonzola cheese crumbles on top of each shell. Bake until the filling holds its shape. Remove from oven and allow to cool or may be eaten warm
