Butternut Squash Soup

Introduction

Ingredients

    Butternut squash
    Sweet potato
    Chicken stock
    Carrots
    Celery
    Onion
    Garlic
    Garam Marsala
    Cinnamon
    Nutmeg
    Maple Syrup
    Half and half

Directions

Bake butternut squash and sweet potato in oven until soft, cube, and add to stock pot with 2 1/2 cups of no sodium chicken stock. Cut up carrots, celery, onion, and garlic and add to broth. Cook for 1 hour+ until all vegetables cooked through and soft. With an immersion blender blend all ingredients together until soft. Add 1 tsp of garam marsal, 1/4 tsp of cinnamon, and 1/8 tsp of nutmeg. If desired add 1 tsp of maple syrup and 1/4 cup of half and half.

Serving Size: Makes 4 - 2 cup Servings
