Slow Cooker Chicken Cordon Stew

Introduction

This is a great slow cooker recipe that can satisfy your need for something a little salty, but healthy! This is a great slow cooker recipe that can satisfy your need for something a little salty, but healthy!
Number of Servings: 8

Ingredients

    2-3 boneless skinless chicken breast
    3 ounces diced ham (I use leftover holiday ham)
    1 8 oz package low fat colby jack cheese
    1 cup fresh spinach
    1/2 onion, diced
    2 cans low fat cream of mushroom soup
    1 box stuffing mix

    Seasoning
    1 tsp nutmeg
    2 tsp garlic powder
    2 tsp black pepper
    1 tsp salt
    2 tsp parsley

Directions

Cut your chicken and ham into small peices of no more than 1". Put in bowl and add seasonings. Toss to coat.

Add in the soup, spinach, cheese, and onion. Mix thoroughouly. Pour into your slow cooker.

Follow the instructions on your stuffing mix, but omit butter and use only 1/2 of the water instructed (if you use the full amount, you will end up with mush).

Add the prepared stuffing to the top of your chicken mixture. Cover and cook for 4-6 hours on med/low.

Makes approximately 8 one cup servings.
