Ingredients

    1 lb. ground bison
    1 large onion, chopped
    1 large sweet green pepper, chopped
    3 stalks celery, chopped
    1 28 oz can diced tomatoes
    2 15.5 oz cans chili beans
    1 pkg. chili seasoning

Tips

Substituting your own chili seasoning would drastically lower the sodium content of this recipe, along with using fresh diced tomatoes and cooking your own chili beans. I love all the green peppers and celery in this recipe and have made it for years.


Directions

Brown ground bison and onion. Add diced tomatoes, green peppers, celery, chili beans, and chili seasoning. Bring to a boil, then reduce heat and simmer for 1 hour until celery is tender.

Serving Size: makes approx. eight 1.5-cup servings
