Introduction

Number of Servings: 15

Ingredients

    entire box Trader Joe's Pumpkin Bread & Muffin Mix (dry mix)
    .25 cup Applesauce, unsweetened (this is a substitute for 1/2 cup oil)
    0.5 cup egg substitute - like Eggbeaters (this is a substitute for 2 large eggs)
    1 cup (8 fl oz) Water

Tips

If you have a mini-muffin pan, you can make bite-sized muffins that are half the calories! Use 1/8 cup of batter for each muffin, and cook about 11-13 minutes.


Directions

Preheat oven to 400F degrees. Line muffin pan with paper baking cups. Mix wet ingredients, then add dry mix. Fold together with a rubber or silicone spatula until batter is smooth (approx. 1-2 minutes)
Fill a 1/4 cup measuring cup with batter and wipe off excess. Pour into each baking cup - should fill it about 2/3 full. You should be able to fill 15 cups this way. Cook for 18-20 minutes, or until toothpick pushed in middle of muffin comes out clean.

Serving Size: Makes 15 regular-sized muffins (1/4 cup batter each)
