Mini Pumpkin Spice Muffuns

Introduction

This is a recipe that came with my little bakery machine, but I tweaked it to make it healthier. I cut the sugar to half of the original and subbed applesauce for the oil. Ingredients

    *Flour, white, 1 cup (remove)
    *Whole Wheat Flour, 1 cup (remove)
    Granulated Sugar, .665 cup (remove)
    Baking Soda, 1.25 tsp (remove)
    Baking Powder, .25 tsp (remove)
    Cinnamon, ground, 1.25 tsp (remove)
    Nutmeg, ground, 1.25 tsp (remove)
    Allspice, .75 tsp (remove)
    Salt, .75 tsp (remove)
    Pumpkin, canned, without salt, 2 cup (remove)
    Applesauce, unsweetened, .5 cup (remove)
    Egg, fresh, 2 large (remove)
    Cloves, ground, 1.25 tsp (remove)

Directions

Combine all ingredients and mix well. Make in mini muffin pan that is spritzed with oil or nonstick spray. I put about a tablespoon of batter per mini muffin well.

They might take a bit longer to bake in an oven @ about 350. But they take 7 minutes flat in my bakery machine.
