Caprese Sandwiches with Strawberry Spinach Salad

Ingredients

    Sandwich:
    8 slices thick sourdough bread
    2 tablespoons olive oil
    1 cup fresh basil, leaves left whole, extra for garnish
    2 beefsteak tomatoes , cored and sliced
    1 8-ounce fresh mozzarella ball, sliced thick
    coarse salt and freshly ground pepper, to taste

    Salad:
    2 cups strawberries, hulled and sliced
    1/4 cup prepared balsamic vinaigrette dressing, divided
    5 ounces fresh spinach
    1/4 cup macadamia nuts, chopped

Directions

Sandwich:
Preheat broiler to high.
[1] Brush one side of each bread slice with olive oil. Place
half of the slices, oil side down, on a baking sheet and layer
with basil leaves, tomato slices, and mozzarella cheese.
Sprinkle lightly with salt and pepper and top with remaining
bread slices, oil side up.
[2] Broil sandwiches, turning once, until bread is golden
brown and cheese is melted, 1 to 2 minutes per side. Garnish
to taste with the extra basil and any herbs you have on hand

Salad:
[1] In a small bowl, toss strawberries with half the salad
dressing and let stand 5 minutes.
[1] Meanwhile, in a large salad bowl, toss spinach with
remaining dressing. Top with strawberries and macadamia
nuts. Serve immediately.
