450 gr cauliflower
3 slices bacon (90 gr) (or 2 T bacon grease)
1 lb ground beef
66 gr tomato paste
1 t cumin
1/2 t garlic powder
1/2 t onion powder
salt and pepper to taste
If you don't have bacon or don't want to use it, cook the beef in a couple of tablespoons of bacon grease, instead.
You can use onion and/or garlic instead of the powders if you prefer. And you can use canned tomatoes or fresh tomatoes if you prefer that.
Basically, you can take most any Spanish Rice recipe and substitute the caulirice for the regular rice and follow these cooking directions.
Add your diced bacon and ground beef to a large saucepan and cook until the meats have browned and cooked almost completely through.
Then add your cauliflower, tomato sauce and spices to the saucepan. Mix thoroughly then cover.
Let cook for about 10-12 minutes, stirring randomly to help incorporate all the flavor.
Some grated cheese would be good on this, but it's good without, too.
Serving Size: 4 servings, about 2 cups each
