Mashed parsnips

Ingredients

    1 lb parsnips (Peeled and cut into quarters)
    1 tbl of unsalted butter


Directions

Boil parsnips. When tender remove the parsnips from the water and allow the water to continue to reduce to approx. 1/4 cup. Add the water to the parsnips in a seperate bowl, add one tablespoon of butter, whip with a mixer. Add salt and pepper to taste.

Serving Size: Makes 4 half cup servings.
