Karen's Chicken Bruschetta Casserole

Introduction

My sister-in-law created this dish. It is sooo good! My sister-in-law created this dish. It is sooo good!
Number of Servings: 6

Ingredients

    Cooking oil
    1 pkg. plain chicken tenders (or 4 4oz.chicken breasts)
    half of a large onion, sliced and/or chopped (she used red)
    1 pkg. grape or cherry tomatoes, chopped and seeded (I also use canned diced tomatoes)
    Balsamic vinegar
    Spinach artichoke cheese spread (she used Alouette)
    salt and pepper to taste

Directions

Preheat oven to 350 degrees. In bowl, place chopped tomatoes and onions. Pour enough balsamic vinegar to cover. Let stand for several minutes. Meanwhile, in a skillet, brown chicken pieces in 3 Tbs. of oil. Add more oil if needed.

Place browned chicken in 9x13 casserole dish. Pour vinegar, tomato and onion over the top. Spoon cheese spread on top of all. Bake in oven for 20 minutes or until warmed through.

Makes about 6 servings.
