Egg, Veggie & Pinto bean Breakfast Scramble

Introduction

This is a great high-protein, fiber breakfast. I added spices like garlic, cumin, pepper & salt for extra Spanish flavor. I serve this in a gulten free rice tortilla. It's tastes so good! Number of Servings: 1

Ingredients

    1 egg
    2 egg whites
    1/2 cup Yellow bell peppers
    1/2 Cup mushrooms
    1/2 Cup zucchini
    1/4 " slice of red onions
    1/2 cup cooked rinsed pinto beans
    1 tsp butter


Directions

Spray a little olive oil spray pam in heat pan.
Add veggies & cook until tender
Add 1/2 cup cooked pinto beans
add spices & cook another 2-3 minutes til beans get warm
add eggs & egg whites till tender
Remove from heat & serve with a warm tortilla.
Enjoy1 :)
