Grilled Chicken Cubes with Tomato Basil Sauce

Ingredients

    3 oz. grilled chicken breast

    1 cup cherry tomatoes

    1/2 cup low-fat plain yogurt

    2-3 fresh basil leaves

Directions

Chop the chicken breast, cherry tomatoes, and basil and throw them in a bowl. Add the 1/2 cup of yogurt and stir. Best eaten chilled.

The beauty of this dish is how you can customize the flavor. I favor fresh basil, but you could easily replace it with chopped, fresh oregano and sprinkle it with garlic and chili powders. Use your imagination!

Serving Size: 1 1/2- 2 cups
