DELICIOUS Turkey and Veggie "Lettuce Tacos"/ Lettuce Wraps

Introduction

I made these for dinner for my me and my fiance thinking that our 8 year old wouldn't be into them (made her "super" pasta with marinara and a plate of berries, grapes, carrotts and cherry tomatoes instead) , but I was wrong! She was totally into them!
I surprised myself with this one and will be working it into our weekly rotation. Yum!

Ingredients

    1 lb. 99% Lean Ground Turkey Breast (I used Wegmans brand)
    1 Tbsp. Organic Coconut Oil
    1 c. green pepper (diced)
    1/2 large sweet onion (diced)
    1 c. baby carrots (diced)
    1 c. zucchini (diced)
    1 Tbsp. tamari
    Salt & Pepper to taste
    1 tsp. garlic powder (I'm trying a clove or two of minced garlic next time)
    10 lettuce leaves (used iceberg tonight, romaine next)

Tips

-I made this Sunday night and served it for dinner on Monday.

-I had my turkey & veggies over a 1/2 cup of quinoa... AMAZING!


Directions

Start by adding the coconut oil to a large heavy bottomed pan and heating over medium heat until the oil is hot and has liquefied if using harden oil (will liquefy at 76 degrees), add veggies (and garlic if you choose) and cook until almost tender. Stirring frequently. Add the ground turkey, salt and pepper and garlic powder. Cook until turkey has browned and veggies are tender. Pour in tamari and toss to coat the mixture.

Spoon 1/2 on to a leaf of lettuce and roll to make a "turkey taco".
