Ingredients


    1/24 oz jar of bertolli italian sausage sauce
    2 cups swanson low sodium chicken broth
    325 grams diced eggplant
    205 grams diced zuchini
    155 grams diced onion
    1 cup minute ready to serve brown rice

Tips

I measured 2 cups for dinner and mixed in 1/4 cup ricotta cheese. tasty and satisfying. could also add som parmesan cheese


Directions

put diced eggplant in pyrex bowl with 1/2 sauce and 1 cup broth and microwave covered 6 min 2 times.
put other diced veg in another pyrex bowl with the rest of the sauce and broth. and microwave covered 6 min 2 times
combine both together.

Serving Size: makes 7/ 1 cup servings OR 3.5/ 2 cup servings
