Introduction

my take on fried rice my take on fried rice
Number of Servings: 6

Ingredients

    2 tbs canola oil
    1 medium onion, diced
    2 cloves garlic, chopped
    2" ginger root, minced
    2-4 carrots (depending on size)
    4 oz frozen peas
    6 large eggs
    3 1/3 c water
    2 c brown rice
    2 tsp coriander
    1 tsp cumin
    tamari, salt, pepper, & chili sauce to taste

Directions

Bring rice and water to a boil then drop heat to low and cover. Cook until done.

Heat 1 tbs of oil over medium high heat

Add onions and allow to cook for a few minutes then add ginger followed by garlic and carrots. Add stock if needed. Cook until carrots are done.

Add frozen peas and spices and allow peas to heat up a few minutes then empty pan into a dish and set aside.

Heat 1tbs oil over high heat. Quickly beat the eggs then scramble them in the pan. Season with salt and pepper to taste.

Add the veggies and cooked rice to the eggs and serve. Season with chili sauce and tamari to taste.
