Philadelphia Style Cheesesteak Soup

Ingredients

    1 2 lbs Ground Beef (can use sliced round beef)
    cup butter (unsalted)
    2 garlic cloves (minced)
    1 large onion (diced)
    1 medium green pepper (diced)
    6 large mushrooms (sliced)
    3 cups half-n-half
    2 cups beef broth
    3 tsp worcestershire sauce
    2 cups provolone cheese (shredded)
    1 cup cheddar cheese (shredded)
    1/4 cup Parmesan cheese
    1 tbsp fresh black pepper
    1 tsp sea salt

Tips

A bit high in sodium but you could use low-sodium broth to reduce that, perhaps look for a low-sodium Worcestershire Sauce too. Great to use for dipping breads/chips in as well.


Directions

Brown the ground beef, then remove from pan and set aside saving the juices. Add butter to the juices and melt. Add in the onion, green pepper, garlic, salt and pepper stirring frequently until the veggies are softened. Add in the mushroom for a minute or so to simmer with the veggies. Then sprinkle in the Parmesan cheese and mix to coat thoroughly.

Lower the heat to medium, add in beef broth and Worcestershire sauce. Simmer for 5 minutes. Add in the cream and mix well. Simmer another 2 minutes or so. Then add the meat back into the pan. Now is when you add in the Provolone and Cheddar cheese. Stir thoroughly.

Simmer for about 5 minutes and it's ready.

** CROCKPOT: If you make it the night before, you could add it to the crockpot in the morning and again, cook on low until dinner.
