Pumpkin Cranberry Muffins

Number of Servings: 18

Ingredients

    1 cup white flour
    1 cup whole wheat flour
    1 T baking powder
    1/4 t baking soda
    1 1/2 cup canned pumpkin pie mix
    1/2 cup skim milk
    2 whole eggs
    2/3 cup sweetened dried cranberries (craisins)
    1/3 cup applesauce

Directions

Preheat oven to 350 degrees. In a medium bowl, mix all dry ingredients. In a separate bowl, mix all wet ingredients. Add wet ingredients to dry ingredients and combine until just moist. Add craisins. Fill muffin tins 2/3 full. Bake at 350 for 30 minutes. Makes 18 muffins.
