Directions

- Buy 4 thighs skin-on and bone in. Cut out bone using kitchen shears and trim fat off & skin back to just cover top of thigh
- Spray a large skillet or a dutch oven with olive oil nonstick spray
- Put chicken skin-side down in the room-tempature pan and turn heat on medium
- Cook until skin is well browned, flip and cook other side (about 10 min each side)
- Remove chicken and wipe most of fat (but not 'bits') from pan, put back on heat, and add white wine to deglaze pan (you can add a little water if needed to finish deglazing
- Add onions and garlic and cook until tender, about 3-5 min
- When chicken is cool enough to handle remove skin, toss, and put chicken back in pot
- Add 14 oz can of stewed tomatoes, olives, dry vermouth (or sherry or you can leave this out), and the paprika
- Let it simmer until chicken cooked through (10-20 minutes)
