Chicken Creole

Introduction

Number of Servings: 5

Ingredients

    1 1/2 to 2 lb B/S chicken breast (diced)
    1/4 tsp Pepper
    1 Tbsp Oil


    2 Tbsp Oil
    1/2 c finely sliced Celery
    2 cloves Garlic minced or pressed
    1 c finely chopped Onion
    1/2 c diced Green Pepper
    1 qt Tomatoes
    1 1/2 tsp Paprika
    dash of Cayenne Pepper
    1 Bay Leaf

    5 c prepared Brown Rice

Tips

For a thicker sauce (higher calorie content) add 1 Tbsp corn starch to 1/4 c water and dissolve before adding to tomato mixture (before adding chicken).


Directions

Heat 1 Tbsp oil in electric or large skillet. Add diced chicken to hot oil stirring occasionally until all sides are slightly browned. Remove chicken and juices; set aside. Add 2 Tbsp oil and heat; add onions, green pepper, garlic, and celery. Saute until tender crisp. Add tomatoes and Bay leaf, let simmer for 5 minutes. Add chicken and juices and simmer for 35-40 minutes. Serve over brown rice.
