4 120g (4 1/4 oz ea) skinless chicken breasts
160 g (5 1/2 oz)2% fat cottage cheese
1 cup spinach chopped
1 garlic clove minced
30 g (1 oz) grated low fat cheddar or colby cheese
1/2 cup chopped mushrooms
1/2 tsp onion powder
1/4 cup non fat milk
1/2 cup dried breadcrumbs
Mix together the cottage cheese, spinach mixture, onion powder and cheddar cheese.
Cut a pocket in each chicken breast and fill each with 1/4 of the cheese mixture.
Dip in milk and roll in breadcrumbs.
Place on a greased oven tray, spray lightly with cooking spray and cook at 350degF (180degC) for approx 30 minutes, turning over and spraying half way through)
