From holiday leftovers sprang this scrumptous, healthy dish that may just become a new, year round favorite. High in protein and fiber, this dish is great hot with a tbs. of peanut butter stirred in, or cold--straight from the fridge. Ingredients

1 cup cooked couscous (whole wheat and fiber)
1/2 Pumpkin, canned, without salt
1 Fresh Bosc Pear, peeled and chopped
1 Tbs. Chopped Dates
1/2 miniature box (.5 oz) of Raisins
10 Almonds, chopped
1 Tbs. Spring Tree, Sugar Free Syrup
1 Tbs. Maltitol Clear Syrup - Joseph's
1 tsp. Pumpkin Pie spice (or cinnamon, ginger, cloves, nutmeg or allspice to taste)
Small drizzle of moleasses (1/4 - 1/2 tsp)
2 packs of Splenda sweetener
2 Tbs. Land O Lakes Fat Free Half & Half
Directions
This is super simple to make:
Mix 1 cup cooked couscous, 1 peeled, diced pear, and all remaining ingredients together well divide in half for 2 servings.
Enjoy warm or cold.
