Nutty Pumpkin Harvest Couscous

Submitted by: ANEWAY

Introduction

From holiday leftovers sprang this scrumptous, healthy dish that may just become a new, year round favorite. High in protein and fiber, this dish is great hot with a tbs. of peanut butter stirred in, or cold--straight from the fridge. It would be good for breakfast, as a sweet side-dish or even as a "hearty" dessert. YUM!!! From holiday leftovers sprang this scrumptous, healthy dish that may just become a new, year round favorite.
