Mediterraranean Chickpea Salad

Introduction

Number of Servings: 8

Ingredients

    Salad
    1 can (15 oz) garbanzo beans
    1/8 cup Flat leaf parsley, chopped
    1/2 cup Red bell pepper, diced
    1/2 cup grape tomato's
    1/8 cup black olives, sliced
    1-1/2 oz. feta cheese
    1/8 cup red onion chipped

    Dressing:
    1/2 tbs. lemon juice
    1/2 tbs. red wine vinegar
    1/4 tsp. garlic, chopped
    1 Tbs. plain no fat greek yogurt
    pinch of salt and pepper
    Pinch of Splenda
    1/2 cup cucumbers diced

Directions

Rinse the garbanzo beans and put in bowl. Add parsley, red bell pepper, black olives, onion, and feta cheese

For dressing combine all ingredients in a shaker and poor over salad. Best if it sits for 30 minutes or so but you can eat immediately.

Serving Size: makes 8 1/2-cup servings
